Bean and Vegetable Soup 1/2 of a 1# bag of mixed beans (toss seasoning packet or save for other use) Bring beans to a boil, let boil 10 minutes, turn off heat and allow to soak for a couple of hours to overnight Drain beans, return to pot, add fresh water or broth, and cook until mostly done Add: 1 qt of liquid - broth or water 1/2 handful dried celery Handful dried potatoes - I used the dried hash browns that come in a little milk carton looking container; the brand is Hungry Jack. or you can use any other brand of dried potato Handful dried peas 'n carrots (store bought frozen ones dried in the dehydrator) 1/2 handful dried onions (if you dry these at home, you'll want to put the dehydrator outside!!) 1/2 handful dried cabbage (done at home in the dehydrator) Pint jar of home canned shredded tomatoes in juice Heaping tsp chopped garlic-inna-jar - I buy this at Aldi's; wonderful to keep on hand Bay leaf 1 tsp crushed red peppers pinch of salt Meat optional - smoked sausage or other smoked meats are very good in this, but any meat will serve. Cook until beans are done and flavors are blended. This is a good woodstove or crock pot recipe. If you serve this with cornbread or corn tortillas, you will create a complete protien with the beans. I like to cook it in a deep skillet and let it get pretty thick, then pour corn bread batter over the top and pop it in a hot over (400*F) until the cornbread is done. Alternately, you can cook it until it is fairly thick and serve it over rice for the same purpose. It's very good with some cheese sprinkled over the top (but then again, what isn't )

What I would add to the recipe is to leave yourself a note that you have beans soaking (mine were on the back porch for two days).
